Chinese Shrimp Balls Appetizer

Instructions

  1. Preheat deep-frying oil to 350°F.

  2. Soak shrimp in warm, lightly salted water for 5 minutes, then rinse, drain, and pat dry.

  3. If using canned water chestnuts, rinse them under warm water and drain.

  4. Mince the shrimp and water chestnuts.

  5. In a bowl, combine minced shrimp, water chestnuts, green onion, ginger, soy sauce, rice wine, sugar, sesame oil, pepper, egg white, and cornstarch.

  6. Form the mixture into approximately 1-inch balls.

  7. Carefully deep-fry the balls in batches, turning constantly, for 3 to 4 minutes until crisp and golden, then remove and drain on paper towels.

  8. Serve the shrimp balls with sweet and sour sauce, plum sauce, or hot mustard.
