Chinese Shrimp Balls Appetizer
These savory shrimp balls make an ideal appetizer for cocktail parties or dim sum brunches, best served with your preferred dipping sauce.

Instructions

Preheat deep-frying oil to 350°F.

Soak shrimp in warm, lightly salted water for 5 minutes, then rinse, drain, and pat dry.

If using canned water chestnuts, rinse them under warm water and drain.

Mince the shrimp and water chestnuts.

In a bowl, combine minced shrimp, water chestnuts, green onion, ginger, soy sauce, rice wine, sugar, sesame oil, pepper, egg white, and cornstarch.

Form the mixture into approximately 1-inch balls.

Carefully deep-fry the balls in batches, turning constantly, for 3 to 4 minutes until crisp and golden, then remove and drain on paper towels.

Serve the shrimp balls with sweet and sour sauce, plum sauce, or hot mustard.
