Instructions

  1. Sift flour, baking powder, baking soda, and salt into a bowl.

  2. In a separate large bowl, cream butter, shortening, white sugar, and brown sugar, then beat in eggs and almond extract until well blended.

  3. Combine the sifted dry ingredients with the wet mixture, mixing until a crumbly dough forms.

  4. Shape the dough into two 10 to 12-inch logs, wrap, and refrigerate for at least 2 hours.

  5. Preheat the oven to 325 F.

  6. Score and cut each chilled dough log into 3/4-inch pieces, yielding approximately 15 per log.

  7. Roll each piece into a ball, then coat it thoroughly in sesame seeds.

  8. Arrange the sesame-coated balls 2 inches apart on a lightly greased cookie tray.

  9. Bake for 15 to 17 minutes at 325 F, or until the cookies lift easily and a fork inserted into the center comes out clean.

  10. Cool the cookies completely before serving or storing.
