Chinese Salt And Pepper Spareribs With Homemade Pepper Salt

A popular dish in Chinese cuisine, these salt and pepper spareribs are a crowd-pleasing appetizer.

Instructions

  1. Toast Sichuan peppercorns and salt in a dry saucepan over medium-low heat for 2-3 minutes, stirring constantly.

  2. Sieve the peppercorns from the salt, then mix the seasoned salt with ground black pepper.

  3. In a large bowl, combine the marinade ingredients, then add the cut spareribs. Marinate for at least 30 minutes, stirring occasionally.

  4. Heat oil in a wok to 350 F (180 C). In batches, deep fry the spareribs for 1 minute, then turn off the heat and leave them in the oil for 5 minutes.

  5. Drain the ribs and set them aside.

  6. Place scallion, garlic, and chili in a large heatproof mixing bowl.

  7. Reheat the oil to 350 F (180 C). Deep-fry the spareribs again in batches for 3-4 minutes until crispy.

  8. Drain the crispy ribs and transfer them to the mixing bowl with the scallion, garlic, and chili.

  9. Add Chinese Pepper Salt to taste and quickly toss to combine.
