Chinese Green Beans

A spicy Sichuan dish, these Chinese green beans are twice-fried and then coated in a flavorful sauce.

Instructions

  1. Wash, trim ends, and cut green beans diagonally into 2-inch pieces.

  2. Combine sauce ingredients in a bowl and set aside.

  3. Heat 2 tablespoons oil in a wok over medium heat.

  4. Add green beans and stir-fry for 7 to 10 minutes until tender and skins pucker; remove beans from wok.

  5. Heat remaining 1 tablespoon oil in the wok over medium-high heat.

  6. Add chopped garlic, ginger, and scallions; stir-fry briefly until aromatic.

  7. Stir in chile paste.

  8. Return green beans to the wok with the prepared sauce and toss to combine.

  9. Serve hot.
