Chinese Green Beans
A spicy Sichuan dish, these Chinese green beans are twice-fried and then coated in a flavorful sauce.

Instructions

Wash, trim ends, and cut green beans diagonally into 2-inch pieces.

Combine sauce ingredients in a bowl and set aside.

Heat 2 tablespoons oil in a wok over medium heat.

Add green beans and stir-fry for 7 to 10 minutes until tender and skins pucker; remove beans from wok.

Heat remaining 1 tablespoon oil in the wok over medium-high heat.

Add chopped garlic, ginger, and scallions; stir-fry briefly until aromatic.

Stir in chile paste.

Return green beans to the wok with the prepared sauce and toss to combine.

Serve hot.
