Chinese Garlic Sauce for Stir-Fries

Instructions

  1. In a small bowl, combine 2 tablespoons rice vinegar, 2 tablespoons granulated sugar, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 2 teaspoons rice wine or sherry, 1/2 teaspoon chile sauce, and 1/4 teaspoon sesame oil.

  2. In a separate small bowl, dissolve 1 1/2 teaspoons cornstarch in 1 tablespoon water.

  3. Heat 1 tablespoon vegetable oil in a saucepan over medium heat. Add 3-4 finely chopped garlic cloves and cook, stirring for 30 seconds until aromatic.

  4. Stir the soy sauce mixture, add to the saucepan, and bring to a boil while stirring for one minute.

  5. Re-stir the cornstarch mixture, add to the sauce, and stir until thickened.

  6. Serve the sauce with stir-fries.
