Instructions

  1. Rinse 1 cup of long or medium-grain rice, add 1 1/2 cups water (1 1/4 cups for medium-grain), and bring to a boil.

  2. Cover, simmer for 30 minutes, then remove from heat and cool.

  3. Preheat oven to 300 F while the rice cools.

  4. Spread the cooled rice on a baking sheet in a 1/4-inch layer.

  5. Bake for 50 to 55 minutes until dry, then cool.

  6. Cut the dried rice into 2-inch squares and store in a container.

  7. To serve, deep-fry a few rice squares at a time, turning until browned and puffed, then drain on paper towels.

  8. Pour hot liquid over the freshly fried rice immediately to achieve the sizzling effect.

  9. For safety, ensure rice is completely dried and rapidly cooled, then refrigerate for up to seven days.
