Chinese Cold Sesame Noodles

A flavorful Chinese sesame noodle dish with a sauce reminiscent of Thai peanut flavors, easily made from common pantry ingredients.

Instructions

  1. Start boiling water for the rice noodles.

  2. Cook rice noodles in boiling water for 5 minutes until soft, then drain thoroughly.

  3. Heat 2 tablespoons sesame oil in a large skillet; fry the noodles for 3 to 5 minutes until soft, then remove from heat.

  4. In a bowl or blender, combine 1 tablespoon sesame oil, peanut butter, water, tahini, vinegar, maple syrup, soy sauce, garlic, and ginger.

  5. Toss the prepared sauce with the noodles and adjust seasoning with salt if necessary.

  6. Stir in the chopped green onions, then chill for 20 minutes; garnish with toasted sesame seeds, cilantro, and lime wedges before serving.
