Chinese Beef With Broccoli Stir Fry Recipe

Instructions

  1. Start boiling a pot of salted water.

  2. Combine egg white, 1/2 tablespoon potato starch, rice wine, soy sauce, oyster sauce, sugar, and black pepper in a bowl; add beef, coat, and marinate for at least 30 minutes (optionally add baking soda for softer texture).

  3. Cut broccoli into florets; blanch in the boiling water for 20-30 seconds, then drain and immediately cool in ice water.

  4. Heat oil in a wok; stir-fry garlic and ginger, then add beef and stir-fry for 1 minute. Remove beef and set aside.

  5. Clean the wok, add a little oil, and stir-fry broccoli for 20 seconds.

  6. Return beef to the wok; stir-fry for 30 seconds.

  7. Stir in the potato starch-water mixture and cook for 20 seconds.

  8. Season with salt to taste and serve with hot white rice.
