Chinese Almond Cookies

Instructions

  1. Preheat the oven to 325 F.

  2. Sift flour, baking powder, baking soda, and salt into a large bowl.

  3. In a separate bowl, beat butter, shortening, and sugar.

  4. Mix in egg and almond extract until blended.

  5. Combine the wet ingredients with the flour mixture and mix well; the dough will be crumbly.

  6. Form the mixture into dough, then shape into two 10 to 12-inch logs.

  7. Wrap and refrigerate the logs for 2 hours.

  8. Score one log at 3/4-inch intervals to create 15 pieces, then cut.

  9. Roll each piece into a ball and place on a lightly-greased cookie tray, 1 1/2-inches apart.

  10. Press an almond into the center of each cookie. Repeat with the remaining dough.

  11. Lightly brush each cookie with beaten egg.

  12. Bake for 15 to 18 minutes until golden brown.

  13. Cool the cookies before serving or storing.
