Chickpea Pasta Recipe

A rich, flavorful chickpea sauce coats pasta, finished with cumin-dusted crispy chickpeas.

Instructions

  1. Start boiling salted water in a large pot.

  2. Mince garlic and rinse chickpeas.

  3. Cook angel hair pasta, reserving 1 cup of pasta water before draining.

  4. Dry the pot, then heat 1 tablespoon olive oil over high heat with cumin and coriander for 1 minute, stirring.

  5. Add rinsed chickpeas, salt, black pepper, garlic powder, and red pepper flakes; cook on high for 5 minutes until lightly browned. Reserve 1/4 cup of chickpeas.

  6. Purée the remaining chickpeas with 1 tablespoon olive oil and reserved pasta water until smooth; adjust seasoning.

  7. Over low heat, sauté minced garlic for 1 minute. Add the pasta, reserved whole chickpeas, Parmesan, and chickpea sauce, then toss to combine.

  8. Garnish with lemon juice and fresh parsley, then serve.
