Chicken Yakitori

Traditional Japanese-style chicken kebabs, known as yakitori, are grilled and served with a simple dipping sauce.

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a bowl, combine 1/2 cup soy sauce, sake (or dry sherry), sugar, ginger, and chives; mix until sugar dissolves.

  3. Marinate chicken in half the mixture within a resealable bag for 1 hour, reserving the other half of the marinade.

  4. Skewer the marinated chicken pieces, alternating with scallions, then discard the used marinade.

  5. Grill skewers for 6 to 8 minutes (reaching 165 F internal temperature), turning and brushing with the reserved marinade during the initial 2 to 4 minutes.

  6. In a small saucepan, heat the remaining 1/2 cup soy sauce for dipping.

  7. Serve.
