Chicken Yaki Udon

Instructions

  1. Loosen and separate pre-cooked udon noodles in warm water, then drain.

  2. Whisk oyster sauce, dark soy sauce, mirin, brown sugar, and dashi powder (if using) in a small bowl until dissolved.

  3. Heat oil in a wok over high heat; cook sliced chicken for 2-3 minutes until opaque.

  4. Add cabbage, shiitake mushrooms, and chopped scallions; stir-fry for 2-3 minutes until vegetables soften.

  5. Stir in drained noodles and sauce mixture, cooking for 2 minutes until tender and absorbed.

  6. Garnish with sliced scallions and toasted sesame seeds before serving.
