Chicken With Spinach and Pasta

Instructions

  1. Cook spinach in chicken broth over medium heat until wilted; drain and press out excess liquid, reserving broth.

  2. Start boiling salted water, then cook and drain pasta according to package directions.

  3. Heat a skillet, then sauté oil and garlic until tender.

  4. Add spinach and nutmeg to the skillet; season with salt and pepper.

  5. Stir in grilled chicken and a small amount of reserved broth; cook until hot, adding more broth as needed.

  6. Fold the hot drained pasta into the spinach mixture until well blended.

  7. Sprinkle with Parmesan cheese and serve immediately.
