Chicken With Mornay Sauce

Instructions

  1. Preheat the oven to 400 F and butter a 2-quart baking dish.

  2. Cook noodles according to package directions, then drain and place them in the prepared dish.

  3. Melt butter in a saucepan, blend in flour, and cook for 1 minute, stirring constantly.

  4. Gradually add milk and cook, stirring, until the mixture thickens.

  5. Stir in pimiento, sherry, and chicken; cook until heated through, then season with salt and pepper.

  6. Spoon the chicken mixture over the noodles, sprinkle with cheese, and bake for 20 minutes until lightly browned.

  7. Remove from oven, cool slightly, and serve hot.
