Chicken With Fluffy Drop Dumplings

Melt butter and olive oil in a Dutch oven over medium heat. Pat chicken dry and sear until browned on all sides, about 4 to 5 minutes.

Add water, celery, onion, garlic, thyme, parsley, bay leaf, seasoned salt, and pepper to the pot. Cover, bring to a boil, then simmer for 1 to 2 hours until the chicken is tender.

Remove chicken meat from the bones, chop it, and return to the pot.

In a small bowl, mix flour with enough cold water to form a smooth paste. Stir this paste into the hot stew over medium heat until thickened.

For the dumplings, whisk together 1 cup of flour, baking powder, poultry seasoning, and salt in a bowl. Cut shortening into the flour mixture with a fork, then add fresh parsley.

In a separate bowl, whisk the egg and milk. Combine this with the dry mixture, stirring until a sticky, shaggy dough forms.

Drop the dumpling dough by teaspoonfuls onto the chicken soup. Cover and steam for 10 minutes, or until the dumplings are fluffy and cooked through.
