Chicken With Boursin Cheese Sauce

Instructions

  1. Start boiling water for pasta.

  2. Dry chicken breasts, pound to an even thickness, and season with salt and pepper.

  3. Heat olive oil and butter in a large skillet over medium heat. Cook chicken 5-7 minutes per side until browned and cooked through; remove and keep warm.

  4. Sauté mushrooms in the same skillet until tender.

  5. Stir in chicken broth and thawed peas; simmer 1-2 minutes.

  6. Blend in Boursin cheese until smooth.

  7. Return chicken to the skillet with tomatoes; stir, cover, and heat through.

  8. Remove from heat, garnish with parsley if desired, and serve immediately over hot cooked pasta.
