Instructions

  1. Preheat the oven to 350 F.

  2. Brown chicken thighs in oil and butter in a large skillet; transfer chicken to a casserole dish.

  3. Stir flour into the skillet juices; cook for 2 minutes.

  4. Add salt, pepper, garlic, wine, and tomatoes; bring to a boil.

  5. Stir in mushrooms, olives, thyme, and parsley; cook over medium heat for 4 to 5 minutes.

  6. Pour the sauce over the chicken in the casserole dish.

  7. Cover and bake for 40 minutes.
