Chicken Tatsuta-Age

A flavorful Japanese deep-fried chicken, Tatsuta-age is prepared by marinating chicken in a soy sauce mixture and coating it in potato starch.

Instructions

  1. Preheat oil to 330 F in a deep pan.

  2. Combine soy sauce, sake, mirin, and ginger juice in a bowl.

  3. Marinate chicken in this mixture for 30 to 60 minutes.

  4. Remove chicken from the marinade and pat dry.

  5. Lightly coat chicken pieces with potato starch (katakuriko).

  6. Deep-fry chicken until cooked, then drain on paper towels.
