Chicken Stuffed With Basil and Mozzarella Cheese

Instructions

  1. Preheat oven to 375°F and lightly oil a baking pan.

  2. Pound chicken breasts to 1/4 inch thick; season with salt and pepper.

  3. Sauté garlic in butter for 1 minute, then mix with basil.

  4. Spread basil mixture over each chicken breast, top with Mozzarella, roll up, and secure with toothpicks.

  5. Beat an egg; combine breadcrumbs and parsley.

  6. Dip chicken rolls in egg, then coat with breadcrumbs.

  7. Arrange on the baking sheet and bake for 30-40 minutes until cooked through.

  8. For the sauce: Heat 3 tablespoons butter over medium-low heat.

  9. Cook mushrooms until tender and browned.

  10. Add garlic, green onions, 1/4 teaspoon salt, and a dash of pepper; stir for 1 minute.

  11. Stir in flour until blended, then add chicken broth and simmer for 2 minutes.

  12. Stir in cream and heat through.

  13. Serve chicken with the prepared sauce.
