Chicken Stuffed With Basil and Mozzarella Cheese
Thinly pounded chicken breasts, filled with a flavorful basil, garlic, and cheese mixture, are baked and served with a rich mushroom sauce.

Instructions

Preheat oven to 375°F and lightly oil a baking pan.

Pound chicken breasts to 1/4 inch thick; season with salt and pepper.

Sauté garlic in butter for 1 minute, then mix with basil.

Spread basil mixture over each chicken breast, top with Mozzarella, roll up, and secure with toothpicks.

Beat an egg; combine breadcrumbs and parsley.

Dip chicken rolls in egg, then coat with breadcrumbs.

Arrange on the baking sheet and bake for 30-40 minutes until cooked through.

For the sauce: Heat 3 tablespoons butter over medium-low heat.

Cook mushrooms until tender and browned.

Add garlic, green onions, 1/4 teaspoon salt, and a dash of pepper; stir for 1 minute.

Stir in flour until blended, then add chicken broth and simmer for 2 minutes.

Stir in cream and heat through.
