Chicken Stewed in Paprika and Cayenne Pepper Sauce

Halve tomatoes, scoop out seeds, chop into small pieces, and set aside.

Pat chicken dry. In a large pan, heat olive oil, then brown chicken on both sides. Remove and set aside.

In the same pan, cook onions with a pinch of salt over medium heat until translucent. Add minced garlic and sauté for 2 minutes.

Stir in the chopped tomatoes, cooking for 5 minutes until softened. Return the chicken to the pan.

Season with cayenne, paprika, and salt. Add chicken broth, stir, and arrange chicken in an even layer. Cover and simmer on medium-low for 25 minutes until chicken is tender.

Uncover and simmer for an additional 10 minutes, reducing the sauce by half. Adjust seasoning if needed. Serve with rice or bread.
