Chicken Scampi

Start boiling water for pasta according to package directions.

In one bowl, combine flour, 1 tablespoon Italian seasoning, salt, and pepper; in another, season heavy cream with salt and pepper.

Dredge chicken in the flour mixture, then cream, then flour mixture again.

Heat 2 tablespoons olive oil in a large skillet over high heat. Sauté chicken for 2 minutes per side until golden brown; remove and slice.

Add 2 more tablespoons olive oil to the skillet, reduce heat to medium-high. Cook garlic, peppers, and red onion for 2-3 minutes until slightly soft.

Stir in butter for 1 minute. Add wine and broth; reduce heat to medium-low and cook for 8-10 minutes until most liquid evaporates.

Add whole milk, remaining 1/2 tablespoon Italian seasoning, dried parsley, salt, and pepper; cook for 1 minute.

Combine sliced chicken, cooked pasta, and lemon juice with the sauce. Increase heat to medium-high and cook for 1-2 minutes until heated through.

Garnish with fresh parsley and additional salt if desired, then serve.
