Chicken Salad With Walnuts and Grapes Recipe

Instructions

  1. Start boiling water in a medium saucepan with two boneless chicken breast halves, peeled onion chunks, 1 teaspoon kosher salt, and 1/4 teaspoon black pepper (plus optional herbs).

  2. Once boiling, cover and reduce heat to medium-low, cooking for 7 minutes, then remove from heat and let stand covered for 12-15 minutes until chicken reaches 165°F (74°C).

  3. Drain and cool the chicken, then dice it for the salad.

  4. Toast 1/2 cup walnut pieces in a dry skillet over medium heat until aromatic and lightly browned, then transfer to a plate to cool.

  5. Combine the diced chicken with 1/3 cup mayonnaise, sour cream, sliced grapes, sliced green onions, sliced celery, toasted walnuts, salt, pepper, lemon juice, and honey.

  6. Stir to combine, adding more mayonnaise if desired.

  7. Serve the chicken salad on salad greens or within sandwich rolls.
