Chicken Salad With Walnuts and Grapes Recipe

Start boiling water in a medium saucepan with two boneless chicken breast halves, peeled onion chunks, 1 teaspoon kosher salt, and 1/4 teaspoon black pepper (plus optional herbs).

Once boiling, cover and reduce heat to medium-low, cooking for 7 minutes, then remove from heat and let stand covered for 12-15 minutes until chicken reaches 165°F (74°C).

Drain and cool the chicken, then dice it for the salad.

Toast 1/2 cup walnut pieces in a dry skillet over medium heat until aromatic and lightly browned, then transfer to a plate to cool.

Combine the diced chicken with 1/3 cup mayonnaise, sour cream, sliced grapes, sliced green onions, sliced celery, toasted walnuts, salt, pepper, lemon juice, and honey.

Stir to combine, adding more mayonnaise if desired.
