Instructions

  1. Preheat grill to medium-high and spray with cooking spray.

  2. Cook 6 bacon strips, cool, and coarsely chop.

  3. Combine spinach, chipotle pepper, Gouda cheese, and chopped bacon in a bowl.

  4. Pound each chicken breast flat, then place 1/4 cup of filling on one side, roll up, and tuck.

  5. Wrap each chicken roulade with two uncooked bacon pieces and secure with toothpicks.

  6. Grill chicken with the lid closed for 8 to 10 minutes, turning halfway. Continue grilling for 8 to 10 minutes with the lid open until crisp and the internal temperature reaches 165 F.

  7. Rest roulades for 10 minutes, then remove toothpicks, slice, and serve.
