Chicken Roulade Stuffed With Smoked Bacon, Spinach & Gouda

Instructions

Preheat grill to medium-high and spray with cooking spray.

Cook 6 bacon strips, cool, and coarsely chop.

Combine spinach, chipotle pepper, Gouda cheese, and chopped bacon in a bowl.

Pound each chicken breast flat, then place 1/4 cup of filling on one side, roll up, and tuck.

Wrap each chicken roulade with two uncooked bacon pieces and secure with toothpicks.

Grill chicken with the lid closed for 8 to 10 minutes, turning halfway. Continue grilling for 8 to 10 minutes with the lid open until crisp and the internal temperature reaches 165 F.

Rest roulades for 10 minutes, then remove toothpicks, slice, and serve.
