Chicken Rice Balls (Onigiri)

Chicken rice balls, also known as onigiri, are simple to prepare and offer a delicious, integrated flavor.

Instructions

  1. Rinse rice until water runs clear. In a pot, combine rinsed rice with 1.5 cups water and salt; bring to a boil, then cover and simmer for 15 minutes.

  2. Remove pot from heat and let stand, covered, for 5 minutes. Uncover, stir, and spread rice on a tray to cool.

  3. Finely chop chicken. In a saucepan, combine chopped chicken, soy sauce, sake, and mirin. Bring to a boil, then reduce heat and simmer, stirring, until chicken is cooked through and most liquid is absorbed, about 5 minutes.

  4. Spread chicken mixture on a tray to cool completely.

  5. Once cooled, thoroughly mix the rice and chicken. If using, crumble seaweed and mix it evenly into the blend.

  6. Dampen your hands. Form small handfuls of the mixture into compact balls or patties, re-dampening hands as needed to prevent sticking.

  7. Cover the chicken rice balls and serve, or chill them for later consumption.
