Instructions

  1. Heat 1 teaspoon of oil in a large frying pan over medium heat.

  2. For each quesadilla, sprinkle 1/2 cup chicken and 1/2 cup cheese over half of a tortilla, then fold it.

  3. Place one quesadilla at a time in the hot skillet; cook for 2 minutes per side until golden brown and the cheese is melted.

  4. Remove the cooked quesadilla to a plate, repeat with the remaining tortillas, and serve immediately.
