Chicken Marengo With Mushrooms, Garlic, and Tomatoes

Instructions

  1. Coat chicken pieces with flour in a food storage bag.

  2. In a large skillet, sauté onions and bell pepper in 1-2 tablespoons olive oil until translucent; remove.

  3. Brown the floured chicken in 2-3 tablespoons olive oil in the same skillet; remove.

  4. Add butter to the skillet, then sauté mushrooms until tender (3-4 minutes). Stir in garlic for 1 minute.

  5. Pour in wine and cook until almost evaporated.

  6. Add chicken stock, tomatoes, lemon juice, and tomato paste; blend well and bring to a boil.

  7. Return chicken and sautéed vegetables to the pan with parsley sprigs and bay leaf. Season with salt and pepper.

  8. Reduce heat, cover, and simmer for about 10 minutes until chicken is cooked through.

  9. Discard bay leaf and parsley sprigs.

  10. Serve the chicken mixture, garnished with fresh parsley, alongside pasta, egg noodles, or rice.
