Chicken Marengo: Napoleon's Favorite Dish

Instructions

  1. Season chicken with salt and pepper, then heat olive oil in a heavy-bottomed sauté pan over medium-high heat.

  2. Brown the chicken breasts for 2 to 3 minutes per side, then remove and set aside.

  3. Add butter to the pan, cook onions until translucent for about 2 minutes, then add wine and bring to a boil.

  4. Return the chicken to the pan, add tomatoes, cover, reduce heat, and simmer for 10 minutes until tender.

  5. Plate the chicken, then add chopped olives and thyme to the pan sauce and cook for one minute before spooning over the chicken and serving immediately.
