Instructions

  1. Preheat the oven to 350 F.

  2. Sprinkle salt and pepper on a surface; press chicken thighs, skin-side down, then roll tightly and place in a bowl.

  3. In a separate bowl, whisk together garlic, vinegar, brine, wine, and sugar. Stir in olives, prunes, and capers, then pour this mixture over the chicken. Cover and refrigerate to marinate overnight.

  4. When ready to cook, pat the chicken dry. Heat oil in a frying pan until hot, then sear chicken thighs until golden brown and crisp.

  5. Transfer browned chicken to a shallow ovenproof baking dish. Pour the reserved marinade, olives, prunes, and capers over the chicken.

  6. Bake for 45 minutes, basting the chicken periodically.

  7. Serve hot, optionally with extra olives, capers, and a side of rice, quinoa, pasta, or mashed potatoes.
