Chicken Louisiana Recipe

A flavorful Creole-style chicken features tomatoes, green and red bell peppers, and a kick of Tabasco sauce, ideal for serving over rice.

Instructions

  1. Start cooking rice according to package directions.

  2. In a large skillet, melt butter and oil over medium heat.

  3. Brown chicken on all sides, then remove from the skillet.

  4. Sauté onion and garlic in the drippings for 5 minutes until tender.

  5. Reduce heat to medium-low, stir in flour, and cook for 2 minutes.

  6. Remove skillet from heat. Stir in tomatoes, thyme, parsley, bay leaf, salt, and Tabasco sauce.

  7. Return chicken to the skillet.

  8. Return to low heat and cook, stirring occasionally, for 15 minutes.

  9. Add bell peppers, cover, and cook for another 25 minutes, or until chicken is tender.

  10. Serve the chicken over hot cooked rice.
