Chicken Loaf Is a New Classic
An old-fashioned chicken loaf, similar to a traditional meatloaf, offers a delicious main dish made from cooked, chopped chicken.

Instructions

Preheat the oven to 350 F and spray a 9x5-inch loaf pan with nonstick spray.

In a large skillet, melt butter over medium heat, then cook onion and garlic for 2-3 minutes; add carrot and celery and cook until tender, about 5-6 minutes.

Stir in flour, marjoram, salt, and pepper for 3 minutes, then gradually add milk and chicken broth, stirring constantly until the mixture boils and thickens.

Remove the skillet from heat, add cooked chicken, then incorporate breadcrumbs, eggs, wheat germ, lemon juice, and 1/3 cup Parmesan cheese.

Pour the mixture into the prepared loaf pan and sprinkle with the remaining Parmesan cheese.

Bake for 55-65 minutes, or until the loaf reaches 160 F.

Let the loaf stand covered for 10 minutes before unmolding, slicing, and serving with optional cranberry or mustard sauce.
