Chicken Lo Mein Stir-Fry Recipe

Instructions

  1. Start boiling water for noodles.

  2. Cut chicken into 2-inch strips.

  3. Marinate chicken in light soy sauce, rice wine or sherry, sesame oil, and cornstarch for 20 minutes.

  4. Separately, combine all sauce ingredients in a bowl.

  5. Cook noodles in boiling water until al dente (3-5 minutes), then drain and rinse with cold water.

  6. Cut carrot into thin strips and rinse straw mushrooms thoroughly.

  7. Heat 1 tablespoon oil over medium-high to high heat. Stir-fry garlic a few seconds until fragrant.

  8. Add chicken and stir-fry until 80% cooked. Remove chicken; clean wok.

  9. Heat 2 tablespoons oil with salt in the wok. Add carrots and mushrooms; stir-fry for 1 minute.

  10. Return the cooked chicken and add the noodles, stirring to combine.

  11. Pour in the prepared sauce and mix thoroughly.

  12. Cook for 2 more minutes. Adjust seasoning if desired.
