Chicken-Fried Steak With White Gravy

Instructions

  1. Preheat oven to 275 F.

  2. Pound cube steak to tenderize, then season with salt and pepper.

  3. Prepare a breading station with seasoned flour in one bowl and a seasoned egg and milk mixture in another.

  4. Heat 1/2-inch deep canola oil in a large pan over medium-high heat.

  5. Dredge each steak piece in flour, then the egg mixture, then flour again.

  6. Cook steak in batches in the hot oil for 3 to 4 minutes per side until golden, then transfer to a baking sheet and keep warm in the oven.

  7. For the gravy, warm bacon fat or canola oil in a medium pan, add flour, and whisk to form a roux.

  8. Gradually whisk in milk until the gravy boils, then reduce heat and simmer for 8 to 10 minutes, or until thickened, seasoning with salt and pepper.

  9. Serve the warm chicken-fried steak with the prepared gravy.
