Chicken-Fried Steak With White Gravy
A classic Southern dish consisting of crispy, breaded cube steak served with a rich white gravy.

Instructions

Preheat oven to 275 F.

Pound cube steak to tenderize, then season with salt and pepper.

Prepare a breading station with seasoned flour in one bowl and a seasoned egg and milk mixture in another.

Heat 1/2-inch deep canola oil in a large pan over medium-high heat.

Dredge each steak piece in flour, then the egg mixture, then flour again.

Cook steak in batches in the hot oil for 3 to 4 minutes per side until golden, then transfer to a baking sheet and keep warm in the oven.

For the gravy, warm bacon fat or canola oil in a medium pan, add flour, and whisk to form a roux.

Gradually whisk in milk until the gravy boils, then reduce heat and simmer for 8 to 10 minutes, or until thickened, seasoning with salt and pepper.

Serve the warm chicken-fried steak with the prepared gravy.
