Chicken Francese

A classic American dish, Chicken Francaise features fried chicken fillets served with a rich lemon-cream sauce.

Instructions

  1. Preheat a nonstick frying pan over medium-high heat with oil and butter.

  2. Slice chicken breasts horizontally. Prepare flour in one shallow bowl, and beat eggs with salt, pepper, and 2 tablespoons lemon juice in another.

  3. Dredge chicken fillets first in flour, then in egg, and transfer to the hot pan.

  4. Cook chicken 4 minutes per side until golden; remove and keep warm.

  5. In the same pan, on medium heat, sauté shallots for 3 minutes.

  6. Increase heat to medium-high, add white wine, stir, and reduce by half.

  7. Stir in chicken broth and remaining lemon juice; cook 3 minutes. Then stir in cream and parsley, simmering for a couple of minutes.

  8. If using, caramelize lemon wedges in a separate small skillet for 2 minutes per side.

  9. Serve chicken with sauce, optional lemon wedges, and preferred sides.
