Combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.

Slice chicken breasts into thin strips and coat thoroughly with the seasoning mixture.

Heat vegetable oil in a large skillet over medium-high heat.

Sauté the seasoned chicken in the hot skillet for approximately 5 minutes until cooked through, then remove and set aside.

Add sliced onions and pepper strips to the skillet and cook, stirring frequently, for about 5 minutes until tender.

Return the cooked chicken strips to the skillet, toss to combine, and heat through.
