Chicken Fajita Pasta Bake
A creamy and cheesy fajita-spiced pasta dish with tender sautéed peppers, onions, and rotisserie chicken, perfect for a family-friendly meal ready in 30 minutes.

Preheat oven to 375F.

Boil salted water and cook 8oz penne pasta for 2 minutes less than package directions, reserving 1/2 cup pasta water.

In a 12-inch skillet, heat 3 tablespoons oil over medium-high. Sauté sliced bell peppers for 2-3 minutes until soft.

Add sliced red onion and cook for 4 more minutes until all vegetables are softened.

Stir in 2 cloves chopped garlic for 30 seconds until fragrant. Mix in 3 tablespoons fajita seasoning and 3 cups shredded rotisserie chicken.

Pour in 1 1/2 cups heavy cream and reserved 1/2 cup pasta water. Simmer over medium, stirring, until sauce thickens in 2-3 minutes. Remove from heat.

Stir cooked pasta and 1 cup pepper Jack into the skillet mixture. Top with the remaining 1 cup pepper Jack.

Bake for 5 minutes until cheese melts. Broil for 2 minutes until sauce bubbles and top browns. Garnish with cilantro and serve.
