Chicken Enchiladas Suiza

Chicken enchiladas are prepared with a filling of green chiles, chicken, spinach, and cheese, all topped with a rich, creamy white suiza sauce.

Instructions

  1. Preheat oven to 350°F.

  2. In a pan, heat 1 tbsp oil over medium heat, cook onions for 1 minute, then add spinach and cook until wilted (about 5 minutes); stir in chicken and green chiles, then set aside.

  3. In a saucepan, heat crema, evaporated milk, 4 oz cotija, and half of the chile sauce over low heat until smooth.

  4. Coat the bottom of a 9x13 inch baking dish with a thin layer of the prepared sauce.

  5. Soften tortillas by dipping them in warm oil. Fill each with about 1/4 cup of the chicken mixture and sprinkle with 1 tbsp Asadero or Queso Quesadilla cheese.

  6. Roll tortillas and place seam-side down in the baking dish; repeat for remaining tortillas.

  7. Pour remaining cream sauce and drizzle remaining green chile sauce over the enchiladas, then sprinkle with 2 oz crumbled cotija.

  8. Bake for 15 minutes to melt the cheese.
