Chicken Dopiaza

Instructions

  1. Roast coriander and cumin seeds on medium heat until aromatic, then grind them into a coarse powder.

  2. Divide chopped onions into two portions (2/3 and 1/3).

  3. Heat oil in a large pan over medium heat; fry the larger onion portion until golden.

  4. Add chicken and brown it.

  5. Stir in the ground spices, garam masala, turmeric, ginger and garlic pastes, and tomatoes; cook until oil separates. Season with salt.

  6. Incorporate the remaining onion portion and sauté until soft and translucent.

  7. Add 1 1/2 cups of water, bring to a boil, then reduce heat and simmer until the chicken is tender and the gravy thickens.

  8. Garnish with coriander before serving.
