Instructions

  1. Wash lentils thoroughly and combine with chicken stock, salt, and 1 cup of water in a deep pan; bring to a boil and cook until soft, adding more water if necessary.

  2. In a separate pan, dry roast the specified spices (excluding turmeric and nutmeg) over medium heat until fragrant; cool, then grind into a fine powder and mix with turmeric and nutmeg.

  3. Once the lentils are soft, whisk them to achieve a smooth, thick, soup-like consistency.

  4. Heat cooking oil in a pan, then fry fresh coriander, fenugreek, and mint leaves until soft; cool, then process into a smooth paste.

  5. Combine the whisked lentils with ginger, garlic, and tamarind pastes in a deep pan, bringing the mixture to a boil while stirring frequently.

  6. Stir in 1 cup of water, the prepared spice powder, the herb paste, additional salt if required, and the chicken pieces.

  7. Simmer the mixture until the chicken is fully cooked, adding water as needed to maintain a medium-thick consistency, then serve hot.
