Chicken, Cheese, and Penne Pasta Bake

Instructions

  1. Preheat oven to 350 F and grease a 2 to 2 1/2-quart baking dish.

  2. Cook penne pasta in salted boiling water according to package directions, then drain and set aside.

  3. In a large skillet, heat olive oil over medium heat. Cook chicken, mushrooms, and Creole seasoning until chicken is done and mushrooms are browned. Remove to a bowl.

  4. In the same skillet, melt butter and cook minced garlic for 1 minute. Stir in flour for 1 minute until smooth and bubbly. Whisk in milk and chicken broth, cooking until thickened.

  5. Add 1 1/2 cups mozzarella and half the Parmesan to the sauce, stirring until melted. Stir in the cooked chicken mixture and artichokes; season with salt and pepper to taste.

  6. Combine the sauce with the pasta, then transfer to the prepared baking dish. Top with remaining cheeses and a light sprinkle of paprika, if desired.

  7. Bake for 20 to 30 minutes until bubbly and lightly browned.
