Instructions

  1. Preheat the oven to 350°F and grease a 2-quart casserole dish.

  2. Season the chicken with salt and pepper.

  3. Mix drained beans, corn, 1 cup salsa, optional chile peppers, and half the cilantro; place this mixture in the prepared dish.

  4. Arrange seasoned chicken over the bean mixture, then top with the remaining salsa, cilantro, and cheese.

  5. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10 minutes until the chicken is tender.
