Chicken Breasts With Leeks and Parmesan Cheese

Instructions

  1. Preheat oven to 350 F. Heat oil in a large sauté pan over medium-high heat.

  2. Season chicken breasts with salt and pepper, then sear in the pan for 5-6 minutes per side until browned.

  3. Transfer chicken to an ovenproof dish and place in the oven to finish cooking.

  4. In the same pan, reduce heat to medium-low. Melt butter, then sauté leeks for about 6 minutes until softened.

  5. Remove pan from heat, add vermouth, then return to heat and cook until reduced by half. Stir in Parmesan cheese, salt, and pepper.

  6. Remove chicken from oven when it reaches 165 F internal temperature, then let stand. Slice chicken and top with the prepared leeks.
