Instructions

  1. Preheat the oven to 200°F (93°C) and season chicken breasts with salt and pepper.

  2. In a large sauté pan, melt butter over medium-low heat, then cook shallot and ginger until fragrant.

  3. Add chicken broth, 1/2 cup passion fruit pulp, 1/3 cup brown sugar, and chicken breasts, ensuring chicken is covered with liquid.

  4. Bring to a low simmer, cover, and cook for 15-20 minutes, turning once, until chicken is cooked through.

  5. Transfer chicken to an ovenproof pan, cover with foil, and keep warm in the preheated oven.

  6. Pour off all but 1 cup of cooking liquid from the pan.

  7. Whisk in 1 cup passion fruit juice, apple cider, vinegar, soy sauce, 1/3 cup brown sugar, and cornstarch into the remaining liquid.

  8. Bring the sauce to a boil, whisking constantly, and cook for about 5 minutes until thickened. Season to taste.

  9. Pour the finished sauce over the chicken breasts and serve.
