Heat olive oil in a pan, then sauté celery, onion, and garlic until softened; set aside.

Cut chicken into 1-inch pieces; spray a 9x13 baking dish with nonstick spray and season the chicken with salt and pepper.

Whisk together cream of chicken soup, milk, and the sautéed vegetables in a bowl, then pour this mixture over the chicken in the dish.

Sprinkle stuffing mix over the chicken, then evenly pour chicken broth over the stuffing.

Cover the dish with foil and bake for 40 to 45 minutes, or until the chicken is fully cooked.
