Chicken and Rice Pilaf

Instructions

  1. Start boiling the broth in a separate pot.

  2. Melt butter in a medium saucepan over medium-low heat.

  3. Cook chicken and onions for 3 minutes, then add pecans and cook for 2 more minutes, stirring frequently.

  4. Stir in salt, pepper, and coriander until combined.

  5. Add rice and cook for 5 minutes, stirring, until grains are coated with butter.

  6. Pour in the boiling broth and undrained tomatoes; stir well and bring to a boil.

  7. Cover, reduce heat to low, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.

  8. Remove from heat, let stand covered for 5 minutes, then fluff with a fork and serve hot.
