Chicken and Rice Pilaf

Instructions

Start boiling the broth in a separate pot.

Melt butter in a medium saucepan over medium-low heat.

Cook chicken and onions for 3 minutes, then add pecans and cook for 2 more minutes, stirring frequently.

Stir in salt, pepper, and coriander until combined.

Add rice and cook for 5 minutes, stirring, until grains are coated with butter.

Pour in the boiling broth and undrained tomatoes; stir well and bring to a boil.

Cover, reduce heat to low, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.

Remove from heat, let stand covered for 5 minutes, then fluff with a fork and serve hot.
