Chicken and Black Bean Burritos

Instructions

  1. Preheat the oven to 375°F.

  2. Heat oil in a large non-stick skillet over medium-high heat. Sauté garlic, onion, and green bell pepper for 5 minutes until tender.

  3. Stir in cooked chicken, black beans, rice, tomatoes, 1/2 cup salsa, water, cumin, and oregano. Reduce heat to medium and cook for 10 minutes until the rice is tender.

  4. Remove the mixture from heat and stir in the cheese and cilantro until the cheese melts.

  5. Spoon about 1/2 cup of the mixture into each tortilla, roll tightly, and place in a 9x13-inch baking dish. Top with the remaining salsa.

  6. Bake for 15 minutes, or until slightly crisp. Let cool for 3-5 minutes, then top with sour cream and serve.
