Chicken Adobo

Instructions

  1. Combine soy sauce, vinegar, water, garlic, peppercorns, and bay leaves in a heavy pot; add chicken and marinate for 30 minutes at room temperature.

  2. Bring the mixture to a boil over medium-high heat, then reduce heat, cover, and simmer for 30 to 40 minutes until the chicken is tender.

  3. Remove chicken from the liquid and place on a rack to dry.

  4. Increase heat under the pot and reduce the braising liquid for about 10 minutes to create a concentrated sauce; set aside.

  5. Heat oil in a deep skillet to 350F. Fry the chicken in batches for 6 to 8 minutes per batch until golden brown.

  6. Return the fried chicken to the pot with the reserved sauce, toss to coat, and serve.
