Instructions

  1. Line and grease two baking sheets with parchment paper.

  2. Cream butter in a stand mixer on medium-high speed until light and fluffy for 3 minutes.

  3. Add 1 1/2 cups brown sugar and cream again on medium-high speed until creamy and fluffy for 3 minutes.

  4. Mix in the egg and vanilla on medium-low speed until combined.

  5. Add flour, baking soda, and salt; mix on low speed for 15 seconds until incorporated, avoiding overmixing.

  6. Roll dough into balls, dip their tops in the remaining 1/4 cup brown sugar, and place sugar-side up on the prepared sheets.

  7. Freeze the dough balls for at least 1 hour or up to overnight.

  8. When ready to bake, preheat the oven to 350 F.

  9. Bake cookies for 10 to 14 minutes until the edges begin to set.

  10. Cool cookies for a few minutes before transferring to cooling racks.
