Cherry Clafoutis

A classic French clafoutis combines a flan-like batter with fresh cherries, finished simply with powdered sugar.

Instructions

  1. Preheat the oven to 350 F.

  2. Beat eggs, then incorporate 1/3 cup sugar, salt, milk, and vanilla extract. Gently fold in flour until just combined.

  3. Pour one-third of the batter into a buttered 2-quart baking dish. Bake for 10 minutes, then remove the dish.

  4. Distribute whole cherries over the partially baked batter. Evenly sprinkle with another 1/3 cup sugar, then pour the remaining batter over the cherries.

  5. Bake for an additional 45 to 60 minutes, until the clafoutis is puffed and golden brown.

  6. Cool for 10 minutes. Dust with powdered sugar and serve warm, optionally with creme fraiche or whipped cream.
