Cherry Chip Fudge

Instructions

  1. Finely chop maraschino cherries, then press them between thick layers of paper towel to remove as much moisture as possible; let dry for at least 30 minutes.

  2. Prepare an 8x8-inch pan by lining it with aluminum foil and spraying with nonstick cooking spray.

  3. Combine butter, sugar, cream, and salt in a heavy-bottomed medium saucepan over medium-high heat, stirring until the sugar and butter melt.

  4. Once the mixture boils, insert a candy thermometer and continue cooking, stirring frequently, until it reaches 235 F.

  5. Remove the pan from heat, then add white chocolate chips and marshmallow cream; stir vigorously until completely melted and incorporated, briefly returning to heat if needed.

  6. Stir in 1/2 teaspoon cherry extract and pink food coloring (if using), tasting and adding more extract to achieve a strong cherry flavor.

  7. Add the chopped cherries and stir well, then pour the fudge into the prepared pan and smooth into an even layer.

  8. Let the fudge set at room temperature for 3 to 4 hours, or in the refrigerator for 1 to 2 hours, then cut into 1-inch pieces to serve.
