Instructions
-
Finely chop maraschino cherries, then press them between thick layers of paper towel to remove as much moisture as possible; let dry for at least 30 minutes.
-
Prepare an 8x8-inch pan by lining it with aluminum foil and spraying with nonstick cooking spray.
-
Combine butter, sugar, cream, and salt in a heavy-bottomed medium saucepan over medium-high heat, stirring until the sugar and butter melt.
-
Once the mixture boils, insert a candy thermometer and continue cooking, stirring frequently, until it reaches 235 F.
-
Remove the pan from heat, then add white chocolate chips and marshmallow cream; stir vigorously until completely melted and incorporated, briefly returning to heat if needed.
-
Stir in 1/2 teaspoon cherry extract and pink food coloring (if using), tasting and adding more extract to achieve a strong cherry flavor.
-
Add the chopped cherries and stir well, then pour the fudge into the prepared pan and smooth into an even layer.
-
Let the fudge set at room temperature for 3 to 4 hours, or in the refrigerator for 1 to 2 hours, then cut into 1-inch pieces to serve.
