Cheesy Vegetarian Potato Soup

Instructions

  1. Sauté onion and garlic in olive oil in a large pot over medium-low heat until soft.

  2. Add chopped potatoes and sauté for a few minutes more.

  3. Pour in vegetable broth, bay leaf, salt, and pepper; bring to a boil, then reduce to a simmer and cook covered for 20-25 minutes until potatoes are very soft.

  4. Remove the bay leaf, then blend the soup until smooth or to your preferred texture.

  5. Return the soup to the pot, stir in cheese over low heat until melted, adjusting thickness with broth or water as needed; season to taste.

  6. Garnish with green onions and fresh parsley.
